LOOK WHAT'S FOR DINNER !!

Heather made Sunday dinner and this is what we had! We got a small pumpkin from the Halloween party Friday night. We cut out a section, cleaned it out and then filled it with the following recipe:
Halloween Pumpkin Casserole
1 small/medium pumpkin
1 onion chopped
2 TBSP vegetable oil
1 1/2-2 lbs. ground hamburger
2 TBSP soy sauce
2 TBSP brown sugar
1 4oz. can of mushrooms drained
1 can of Cream of Chicken Soup
1 1/2 c. cooked rice
1 8oz. can of water chestnuts (optional)
Brown onion, oil, and hamburger. Add soy sauce, brown sugar, mushrooms, and Cream of Chicken Soup. Simmer for about 15 mins.
Add rice and water chestnuts. Put the mixture in the pumpkin and cook for 1 hour at 350 degrees. You can draw a face with a Sharpie marker on the outside of the pumpkin before you cook it. It's kind of fun to do!
It was really very good. We didn't eat the pumpkin but you can if you want. We baked a Sweet Meat Squash and ate it with the innards of the pumpkin. Mmmm Mmmmmm Good!
Heather even put a face on the pumpkin with a magic marker and wrote "Eat Me" on the top! LOL

LaVerne! Im so happy Heather came to town, I just LOVE Her!! My children and I had a great time with her and Rowan.

Im so happy you posted this for dinner because we're eatin scrimps and those scrimps are running out. Im so happy I have most of the scrimps followed in this recipe and with one of the pumpkins in the front porch I KNOW WHATS FOR DINNER TONIGHT!
